I don’t want my blog to just keep growing longer as I post articles. I need one that only shows the most recent post and everything else can be found through the categories or some other way. Any ideas or links to themes that can do this?

There’s a setting in your wordpress admin that allows you to change this – has nothing to do with the theme.
Look around for options/reading.
